Romanian Traditional Dish – Creamy Mushroom Stew With Polenta

My name’s Iulia and I live in England, UK.

I have been a vegetarian / pescatarian since November, 2020. It all started as a dare to myself to stop eating meat for a week. A week turned into a month and shortly realized I can live without it.

As a result of this I began writing up recipes and decided to share it with the world by creating my own recipes blog.

This romanian traditional dish I made specifically for my good friend Ioana, who I used to live with in Gran Canaria and I have so much love for her!


The mushroom stew

You need just a few ingredients that you probably already have in your kitchen:

  • 1 chopped onion
  • 1 tbsp chopped garlic
  • 250g mushrooms
  • 1.5 tbsp sour cream
  • chopped parsley

For the polenta:

  • 1 cup of cornmeal
  • 1 cup of water
  • And, 1 tbsp butter

This dish represents a special dish for me as it is traditional Romanian, from the country I was born in.

On a normal day, people cook it with chicken. However, when they fast, they tend to cut out meat and replace it with other foods such as mushrooms in this case.


Method:

  1.  In a pan, add the chopped onion and stir until golden.
  2. Add the chopped mushrooms and stir in whilst adding 1/2 cup of water to it. Cook it for 10mins.
  3. Put on some paprika (sweet works), salt and pepper. In a separate small bowl, mix 2 tbsp flour with water until the texture becomes runny.
  4. The mixture, add it then on top of the mushrooms. This method is done to thicken up the sauce.
  5. Further, add the sour cream and threw in some chopped parsley.

For the polenta, simply add water to the pan, a few drops of olive oil and stir.

Then, slowly add the polenta in bit by bit. 

Important tip: DO NOT BOIL the water, only get it warm and leave the heat on medium to low.

Once all the polenta is in, stir continuously and, at the end, add some butter to make it creamy. Salt to taste and keep stirring. The texture is supposed to be gooey.

I cannot BEGIN to explain how lovely and light this dish is.
